The consumption of edible insects is promoted worldwide as one of the measures for guaranteeing the sustainability and security of food production. The main advantage of insects is that they can be raised very close together, they emit virtually no greenhouse gases and they have an extremely high feed conversion rate. In the Flemish-Dutch border region, insect farming is a new but promising sector and there are plenty of signs pointing towards a need for upscaling. One of those signs is that insect research has been included in the second Alternative Protein Sources Action Plan (Actieplan Alternatieve Eiwitbronnen (AAE2)) launched in 2016 by the Flemish government and the Belgian Feed Association (BEMEFA). In addition, Flanders’Food's cornet project, Entomofood, is busily engaged in product developments in this sector. Is the way now open for food companies to incorporate edible insects into foodstuffs? Entomospeed aims to answer this question by filling in the current gaps such as guidance towards a sales market and reducing manual labour with increased automation. In concrete terms, two insect laboratories are being set up, each focusing on a specific case. The HAS University of Applied Sciences (NL) is concentrating on meal worm feed tests, examining various feeds and their impact on the growth regime. The meal worm, in particular, is a promising source of protein for human consumption. The lab on the VIVES campus (Flanders) will be examining the same impact of feed tests with the black soldier fly, which is suitable for animal feed due to its appealing protein composition. For both cases, pilot installations are also being developed to provide for upscaling and automation.

Wereldwijd wordt de consumptie van eetbare insecten gepromoot als één van de maatregelen om de duurzaamheid en de zekerheid van de voedselproductie te garanderen. Het grote voordeel van insecten is dat ze heel dicht bij elkaar gekweekt kunnen worden, dat ze nagenoeg geen broeikasgassen uitstoten en beschikken over een erg hoge voederconversie. In de Vlaams-Nederlandse grensregio is de insectensector een jonge, maar beloftevolle sector en er zijn voldoende signalen die wijzen op een nood aan opschaling. Eén van die signalen is dat het insectenonderzoek opgenomen werd in het tweede Actieplan Alternatieve Eiwitbronnen (AAE2) die in 2016 werd gelanceerd door de Vlaamse regering en BEMEFA (Beroepsvereniging van de Mengvoederfabrikanten). Daarnaast werkt het Cornetproject ‘Entomofood’ van Flanders’Food volop aan nieuwe productontwikkelingen in deze sector. Ligt de weg voor voedingsbedrijven nu open om eetbare insecten te verwerken in levensmiddelen? ‘Entomospeed’ wil antwoord bieden op deze vraag door huidige leemtes in te vullen zoals de begeleiding naar een afzetmarkt en de reductie van handenarbeid door verhoogde automatisatie. Concreet worden er twee insectlabo’s opgezet die zich elk specifiek op een casus focussen. HAS Hogeschool (Nederland) richt zich op voederproeven bij meelwormen waarbij verschillende voeders en de impact op het groeiregime wordt nagegaan. Vooral de meelworm is een beloftevolle bron van proteïnen bij humane consumptie. Het lab op de VIVES-campus (Vlaanderen) gaat dezelfde impact van voerderproeven nagaan bij de zwarte soldatenvlieg, geschikt voor diervoeding wegens de aantrekkelijke eiwitsamenstellling. Voor beide casussen worden tevens pilootinstallaties ontwikkeld om in opschaling en automatisatie te kunnen voorzien.

In this project, both on a laboratory scale and on a pilot scale, the necessary knowledge was generated and transferred to interested companies. Both Inagro and Thomas More started a pilot breeding of the black soldier fly and mealworms that could be visited on demand. The pilot institutions eventually gathered sufficient knowledge to grow at least 500 kg of black soldier fly larvae per week. It also examined whether low-grade vegetable waste streams are suitable as feed in the production of both insect species and whether the use of these residual streams affects the nutritional value of the insects. Several residual streams were tested and the results can be found at www.insectinfo.be. Various automation projects, e.g. separating the different stages of life from insects, were intended to make insect cultivation more efficient. Specifically for the black soldier fly breeding, a special cage was developed where the eggs for further breeding can be harvested in a simple way. There was also attention to the surrounding area: the cultivation process can be monitored by the use of various sensors in terms of temperature, humidity. Work was also carried out on a device to monitor the fine dust content in the culture so that the safety of the workers can also be guaranteed. At the same time, attention was paid to the valorisation of insects and insect products. By carrying out a market research and bringing together knowledge institutes, insect growers and insect processing companies, a better view was gained of potential valorisation possibilities. Through workshops, the potential of insects in both food and feed was highlighted by organising taste tests. Highlights: The main objective was to increase the scale-up and efficiency of insect farming. The project involved the cultivation of flourworm and black soldier fly. In the insect labs, knowledge was generated about the use of residual streams in insect cultivation (e.g. use of beer and potato peels). On a laboratory scale, and in consultation with the consortium, a clear protocol was drawn up to test these residual flows and to determine the feed conversion. These results were then tested on a pilot scale, in which the tests with residual currents on black soldiers fly went very well. In flourworms there were some logistical problems with the residual flows (clogging, mold formation) on a pilot scale so that further research is necessary to be able to apply efficiently. In order to realise the scale-up, automation was also strongly used. For this purpose, several prototypes were developed for the cultivation of flourworms as well as of black soldier fly. The second objective was the valorisation of insect cultivation. By organising various networking moments and workshops, interesting contacts were brought together from various sectors and on the other hand the knowledge of the project partners was transferred to companies, educational institutions and government. Within the project, the info counter was the central point of contact, where some interesting questions were asked. During the project it was also noted that opening up the pilot setups was a strong added value and in this way problems and questions came out more easily by the visitors. In dit project werd, zowel op laboschaal als op pilootschaal, de benodigde kennis gegenereerd en overgedragen aan geïnteresseerde bedrijven. Zowel bij Inagro als Thomas More werd er een pilootkweek opgestart van de zwarte soldaatvlieg en meelwormen die op vraag bezocht kon worden. De pilootinstellingen hebben uiteindelijk voldoende kennis verzameld om minstens 500 kg zwarte soldatenvlieg larven te kweken per week. Er werd daarbij ook nagegaan of laagwaardige plantaardige reststromen geschikt zijn als voeder bij de productie van beide insectensoorten en of het gebruik van deze reststromen een invloed heeft op de nutritionele waarde van de insecten. Er werden verschillende reststromen getest en de resultaten hiervan kunnen terug gevonden worden op www.insectinfo.be. Aan de hand van diverse automatisatie projecten, bijvoorbeeld het scheiden van de verschillende levensfases van de insecten, werd er beoogd om de insectenkweek efficiënter te laten verlopen. Specifiek voor de zwarte soldatenvlieg kweek werd er een speciale kooi ontwikkeld waar de eitjes voor de verdere kweek op eenvoudige wijze kunnen geoogst worden. Er was ook aandacht voor de omgeving: het kweekproces kan door het gebruik van diverse sensoren opgevolgd worden qua temperatuur, luchtvochtigheid. Er werd ook gewerkt aan een toestel om het fijn stof gehalte in de kweek op te volgen zodat ook de veiligheid van de werknemers gegarandeerd kan worden. Tegelijkertijd werd aandacht besteed aan de valorisatie van insecten en insectenproducten. Door uitvoering van een marktonderzoek en het samenbrengen van kennisinstellingen, insectenkwekers en insectverwerkende bedrijven werd een beter zicht gekregen over potentiële valorisatiemogelijkheden. Aan de hand van workshops werd het potentieel van insecten in zowel food als feed naar voren gebracht door onder meer het organiseren van smaaktesten. Highlights De voornaamste doelstelling was de opschaling en efficiëntie van de insectenkweek te verhogen. Hierbij werd er binnen het project ingezet op de kweek van meelworm en zwarte soldatenvlieg. In de insectlabs werd er kennis gegenereerd rond het gebruik van reststromen in de insectenkweek (bvb gebruik van bierbostel en aardappelschillen). Op laboschaal, en in overleg met het consortium, werd een duidelijk protocol opgesteld om deze reststromen te testen en om de voederconversie te bepalen. Deze resultaten werden dan op pilootschaal getest, waarbij de testen met reststromen bij zwarte soldatenvlieg zeer goed verliepen. Bij meelwormen waren er op pilootschaal enkele logistieke problemen met de reststromen (verklontering, schimmelvorming) waardoor verder onderzoek hierop noodzakelijk is om efficiënt te kunnen toepassen. Om de opschaling te realiseren werd er ook sterk ingezet op automatisatie. Hiervoor werden diverse prototypes uitgewerkt voor zowel de kweek van meelwormen als van zwarte soldatenvlieg. De tweede doelstelling was de valorisatie van de insectenkweek. Door het organiseren van diverse netwerkmomenten en workshops werden er enerzijds boeiende contacten samengebracht uit diverse sectoren en anderzijds werd de kennis van de projectpartners overgedragen naar bedrijven, onderwijsinstellingen en overheid. Binnen het project was het infoloket het centrale aanspreekpunt, waar enkele boeiende vragen werden gesteld. Tijdens het project werd ook opgemerkt dat het openstellen van de pilootopstellingen een sterke meerwaarde was en er op deze manier ook gemakkelijker problemen en vragen naar voren kwamen door de bezoekers.
