Voedselverspilling is vanuit ethisch en duurzaamheidsoogpunt niet te verantwoorden en dient dan ook geminimaliseerd te worden. In de voedingsindustrie is er een toenemend bewustzijn in de (her)waardering van plantaardige reststromen om zo verdere voedselverspilling te kunnen tegengaan, maar de sector loopt nog tegen verschillende moeilijkheden aan zoals de grote te verwerken volumes en de strenge hygiëne-eisen. Vaak gaan voedselresten toch verloren omdat er geen geschikte herbestemming voor gevonden wordt. ‘Triple F’ richt zich op verschillende reststromen uit de consumptie, zoals wortel, bieten en aardappelen in Nederland en prei, tomaten en witlof in België. Een ‘kansenkaart’ van de grensregio wordt uitgewerkt met een overzicht van vraag en aanbod bij bedrijven wat betreft plantaardige reststromen, inclusief de verschillende technologieën die toegepast kunnen worden om resten te herbestemmen zoals bijvoorbeeld drogen, vriezen, verhitten. Op basis hiervan zullen 20 nieuwe waardeketens gecreëerd worden. Agro-, food-, voedselverwerkende of technische bedrijven zullen projectvoorstellen kunnen indienen om in aanmerking te komen voor ondersteuning bij uitwerking van hun innovatieve voorstel. Brainport Development, Stichting Food Tech Brainport, Flanders’ FOOD en Innovatiesteunpunt Boerenbond beoordelen de ingediende waardeketenprojecten. Er komen verder vier pilots, waaronder een voor prei en een voor wortel. Voor de wortelpilot staat diepvriesbedrijf Van Rijsingen in. Maar liefst 80% van de wortel eindigt momenteel als plantaardige reststroom. Daarom heeft Van Rijsingen eerder een sapfabriek in werking gesteld om wortelreststromen te scheiden in wortelsap en perskoek/vezels. Naast vezels hebben ook andere ingrediënten in de wortelreststromen na extractie marktpotentie zoals retinol en beta-caroteen. Dit laatste kan bijvoorbeeld gebruikt worden voor de vervaardiging van plantaardige kleurstoffen. Deze aspecten worden verder onderzocht binnen de pilot.

From an ethical and sustainability point of view, food waste is unjustifiable and should therefore be minimised. In the food industry, there is an increasing awareness of the (re)appreciation of vegetable residual flows to combat food wastage, but the sector is still confronted with various difficulties, such as the large volumes to be processed and the strict hygiene requirements. Often, food residues are lost because no suitable reallocation is found for them. Triple F focuses on various residual flows from consumption, such as carrots, beets and potatoes in the Netherlands and leeks, tomatoes and chicory in Belgium. An opportunities map of the border region is being produced that provides an overview of supply and demand from companies with regard to vegetable residual flows, including the various technologies that can be applied to re-allocate residues, such as drying, freezing and heating. Twenty new value chains will be created on this basis. Agricultural and food processing or technical companies will be able to submit project proposals to qualify for support in executing their innovative proposal. Brainport Development, Stichting Food Tech Brainport, Flanders’ FOOD and Innovatiesteunpunt Boerenbond will be assessing the submitted value chain projects. There will be another four pilots, including one for leaks and one for carrots. The deep-freeze company, Van Rijsingen, will be responsible for the carrot pilot. No less than 80% of carrots currently ends up in the residual flow. Van Rijsingen has already opened a juice factory for separating carrot residue flows into carrot juice and press cake/fibres. In addition to fibres, other ingredients in the carrot residual flows, such as retinol and beta-carotene also have market potential after extraction. Beta-carotene can be used for manufacturing vegetable colourings, for example. These aspects are being further investigated within the pilot.

Food from Food (Triple F) heeft de afgelopen jaren in de agro- en voedingsmiddelenindustrie innovaties gestimuleerd, ondersteund en versneld op het gebied van hoogwaardige inzet van plantaardige nevenstromen tot voedingsmiddelen. Dit leidde tot wel 25 projecten tegen voedselverspilling. Het projectconsortium FoodfromFood bestaat uit elf partners uit Nederland en Vlaanderen, elk met hun eigen specialisme: kennis, netwerk en testfaciliteiten. Het project ondersteunde ondernemers zowel op financieel als praktisch gebied. Van het nadenken over product ideeën, over de meerwaarde van plantaardige nevenstromen tot het bieden van de kans om te experimenteren en met verschillende testfaciliteiten aan de slag te gaan. Maar ook de kennis over opschaling en productiemogelijkheden, de marketingstrategie, het uitwerken van de meest kansrijke businesscase en het zoeken naar financiering en samenwerkingspartners. De diversiteit van de nevenstromen was groot: van wortel, fruit, oesterzwamvoetjes en rabarber in Nederland tot prei, fruit, bierbostel en witlof in België. In de afgelopen 4 jaar zijn er diverse bijeenkomsten en congressen georganiseerd waar meer dan 200 organisaties aan deelnamen. Dit leidde tot 25 grensoverschrijdende samenwerkingsprojecten waarin meer dan 30 ondernemingen zijn betrokken. Elk project werd zowel financieel ondersteund als met expertise, onderzoeks- en testfaciliteiten van de partners in het Food from Food consortium. Ook de diversiteit van de deelnemende ondernemers was groot: waar de ene ondernemer nog zoekende was naar het perfecte (eind)product, was er bij de ander al sprake van een gesloten business case. Maar wat ze allemaal gemeen hebben is een sterke bewustwording dat je anders kunt omgaan met nevenstromen en de ambitie om hier iets mee te willen doen. Een voorbeeld van enkele projecten: verwaarding van citruspulp tot food ingrediënten: jaarlijks wordt er 250 miljoen kilo aan citrusschillen in Nederland weggegooid. In dit Food from Food project onderzocht PeelPioneers hoe citrusschillen kunnen worden omgezet in voedingsvezels voor de food industrie met toepassingen in onder andere bakkerijproducten, vlees(vervangers) en soepen en sauzen; innovatieve samenwerking tussen witloofteler en krokettenproducent: grondwitloof is een puur Belgisch product. Jammer genoeg gaat er heel wat verloren tijdens het kuisen van het witloof en gaat een aanzienlijk deel van de oogst naar de tweede keus markt. Door Gastronello en Cools werd nagegaan hoe de reststromen witloof het best verzameld en verwerkt kunnen worden tot ingrediënten voor kroketten; Botanicbites: Botanic Bites valoriseert grote nevenstromen aan groenten en maakt er onderscheidend plantaardig voedsel van; sappiger, smakelijker, voedzamer, gezonder en duurzamer. Er werd een vegetarische snack ontwikkeld met een langere houdbaarheid buiten het koelschap. Food From Food heeft veel bewustwording gecreëerd bij de samenwerkende organisaties op het vlak van verminderen van reststromen, nieuwe inzetmogelijkheden en uitbreiding van het netwerk om gezamenlijk voedselverspilling tegen te gaan. Toch blijft er op dit onderwerp nog veel aandacht nodig. De ontwikkeling van een vernieuwd eindproduct begint met het besef dat de (plantaardige) nevenstroom geen bijvangst meer is, maar een vervaardiging van een unieke grondstof op zich waarvoor een compleet nieuw proces ontwikkeld dient te worden. Niet alleen op het vlak van verwerking, maar vooral ook voor de organisatie (denk hierbij aan keuzes voor eindproducten, mogelijke samenwerkingspartners en nieuwe businessmodellen). Waar de partners onderling in tal van projecten met elkaar samenwerken zullen Flanders'Food en Foodtechbrainport de FoodfromFood Community doorzetten. Dit zal specifiek gebeuren door het onderhouden van de website www.FoodfromFood.eu, het organiseren van kennissessies en bijeenkomsten en het initiëren van mogelijkheden voor vervolgprojecten.

Food from Food (Triple F) has stimulated, supported and accelerated innovations in the agro- and food industry in the field of high-quality use of plant by-flows to food. This resulted in up to 25 projects against food waste. The FoodfromFood project consortium consists of eleven partners from the Netherlands and Flanders, each with their own specialism: knowledge, network and testing facilities. The project supported entrepreneurs both financially and practically. From thinking about product ideas, about the added value of plant side streams to offering the opportunity to experiment and get started with various testing facilities. But also the knowledge about scaling up and production possibilities, the marketing strategy, the development of the most promising business case and the search for funding and cooperation partners. The diversity of the side streams was great: from carrot, fruit, oyster mushroom feet and rhubarb in the Netherlands to leek, fruit, beerbostel and chicory in Belgium. Over the past 4 years, several meetings and congresses have been organised in which more than 200 organisations participated. This led to 25 cross-border cooperation projects involving more than 30 companies. Each project was supported financially as well as with expertise, research and testing facilities of the partners in the Food from Food consortium. The diversity of the participating entrepreneurs was also great: where one entrepreneur was still looking for the perfect (end) product, there was already a closed business case. But what they all have in common is a strong awareness that you can deal differently with side currents and the ambition to do something with it. An example of some projects: neglect of citrus pulp to food ingredients: every year 250 million kilos of citrus peels are thrown away in the Netherlands. In this Food from Food project, PeelPioneers investigated how citrus peels can be converted into dietary fiber for the food industry with applications in bakery products, meat (replacers) and soups and sauces; innovative collaboration between chicory grower and croquette producer: ground whitefloof is a purely Belgian product. Unfortunately, a lot is lost during the cleaning of the chicory and a significant part of the harvest goes to the second choice market. Gastronello and Cools investigated how the residual streams of chicory can best be collected and processed into ingredients for croquettes; Botanicbites: Botanic Bites valorises large sidestreams to vegetables and makes them distinctive plant foods; juicier, tastier, nutritious, healthier and more sustainable. A vegetarian snack was developed with a longer shelf life outside the cooling shelf. Food From Food has created a lot of awareness among the collaborating organisations in terms of reducing residual flows, new deployment possibilities and expansion of the network to collectively reduce food waste. However, much attention is still needed on this subject. The development of a renewed final product starts with the realisation that the (plant) by-current is no longer by-catch, but a production of a unique raw material in itself for which a completely new process needs to be developed. Not only in terms of processing, but especially for the organisation (think of choices for end products, possible cooperation partners and new business models). Where the partners cooperate with each other in numerous projects, Flanders'Food and Foodtechbrainport will continue the FoodfromFood Community. This will be done specifically by maintaining the website www.FoodfromFood.eu, organising knowledge sessions and meetings and initiating possibilities for follow-up projects.
