Description (EN):

The aim of our project is to reconstruct and thematically introduce the rich culinary-confectionery culture from the Esterházy Castle (Galanta) to the Forgách Castle (Mándok), which is part of the intangible heritage. During the Monarchy, French conf ectionery in baronial castles later appeared in peasants’ kitchen too. Consequently, a growing number of traders started selling gingerbread, sweets and wafers in trade fairs in Upper Hungary, and especially in towns along commercial routes in the 18 th century, so as to give space to famous confectioners, who no longer travelled with their merchandise, but offered them at location. The flamboyant appearance of the Monarchy affected the interior of even the smallest confectionery on the target si te of the project. The significant change in the history of confectionery can be seen both in the cookbooks of noble courts and in the pastry recipes of country nuptials. It is possible to demonstrate the phenomenon from the perspective of raw materi al usage, appliances, interior design, and the related – mainly festive, nuptial – customs. Under the project, we will discover the relics of cultural heritage, then after procession, we will make an exciting display of the collection. On some stops of the culinary road, we will introduce ourselves with a travelling exhibition in trade fairs and festivals of the most significant stops, with a mobile display and demonstration area (a mobile confectionery with characteristic interior and authentic offer). The jointly established tourist attraction will be demonstrated in tourist reception areas established on the two endpoints of the route, in the Esterházy Castle (with renovation) and in the Forgách Castle (with a new building), where culina ry-touristic services will be offered: related events (cooking competitions, thematic workshops), touristic programmes (interactive group displays, events) and publications (recipe collection, description of the route in 5 languages).

Cieĺom nášho projektu je rekonštruovať bohatú gastronomicko-cukrársku kultúru, ktorá je významnou súčasťou kultúrného dedičstva, a prezentovať ju na tematickej trase v priestore medzi Eszterházy zámkom v Galánte a Forgách zámkom v meste Mándok. Francúzske cukrárstvo, ktoré bolo prítomné v kaštieloch, sa postupne objavilo aj v roĺníckej kuchyni počas Monarchie. Následne, v 18. storočí na území Horného zemu, hlavne v osadách pozdĺž hlavných obchodných ciest, sa objavili predajcovia ktorí predávali svoje cukrárske tovary na veĺtrhoch, ako napríklad medovinki, cukríky a oblátky. Neskôr, známí cukrári nahradili týchto predajcov a oni už iba lokálne ponúkali svoj tovar. Krásny vzhĺad Monarchie mal obrovský vplyv na vnútorný interiér cukrární v cieĺovej oblasti projektu. Jednotlivé významné zmeny v histórií cukrárstva sú krásne pozorovateĺné a viditeĺné v cukrárskych knihách významných kaštieloch, ako aj v pečivových receptoch dedinnej svadby. Atraktívna prezentácia kuchynských náradí, použitia surového materiálu, vnútorného interiéru a svadobných zvykov je možné a výtané. Projekt ponúka vhodý priestor na to, aby sme preskúmali pamiatky kultúrneho dedičstva a aby sme následne zážitkovo prezentovali kolekciu. Na veĺtrhoch najvýznamnejších miest gastronomickej trasy prezentujeme putovnú výstavu prostredníctvom mobilnej výstavy (mobilná cukráreň ponúka typický interiér a modernú ponuku súčasnej doby). Spoločne vytvorená turistická atrakcia bude predstavená v prijímacich halách na dvoch hlavných miestach projektu, t.j. v zámku Eszterházy v Galánte (rekonštrukcia) a v zámku Forgách v Mándok (výstavba novej budovy). Gastronomické a turistické služby budú ponúkané návštevníkom, pomocou ďalších udalostí (súťaž vo varení, tematické worshopy), turistických programov (skupinové interaktívne výstavy, udalosti) a prezentáciou rôznych publikácií (kolekcia receptov, popis trasy v 5 jazykoch).

Projektünk célja a Galántai Eszterházy Kastélytól a Mándoki Forgách Kastélyig húzódó, a szellemi örökség részét képező gazdag gasztronómiai-cukrászati kultúra rekonstruálása és tematikus útvonal mentén történő bemutatása. A Monarchia idején a főúri kastélyokban megjelenő francia cukrászat később a paraszti konyhákban is megjelent. Ennek hatására a Felvidéken, főleg a kereskedelmi útvonalak menti településeken a XVIII. században már nagy számban jelentek meg a vásárokon mézeskalácsosok, cukorkások, ostyások, hogy azután helyt adjanak híres cukrászoknak, akik már nem vándoroltak a portékával, hanem helyben kínálták. Monarchia színpompás megjelenése a projekt célterületén rányomta bélyegét a legapróbb cukrászda belső enteriőrjére is. A cukrászat történetének jelentős fordulata tetten érhető az előkelő udvarok szakácskönyveiben csakúgy, mint a falusi lakodalmas tésztakészítési receptúrákban. A jelenség attraktív bemutatása az alapanyag-használat, az eszközök, a belsőépítészet és a kapcsolódó – elsősorban ünnepi, lakodalmas - szokások szempontjából egyaránt lehetséges. A projekt keretében felkutatjuk a kulturális örökség emlékeit, majd feldolgozásukat követően élményszerűen bemutathatóvá tesszük a gyűjteményt. A gasztonómiai túraútvonal egyes állomásain vándorkiállítással mutatkozunk be a jelentősebb állomások településeink vásárain, ünnepein egy mobil kiállító-bemutató térrel (mobil cukrászda jellegzetes enteriőrrel és korhű kínálattal). A közösen létrehozott turisztikai attrakció az útvonal két végpontján, a Galántai Eszterházy Kastélyban (felújítással) és a Mándoki Forgách Kastélyban (új épület építésével) kialakított turisztikai fogadóterekben kerül bemutatásra, ahol gasztro-turisztikai szolgáltatásokkal szolgáljuk ki a látogatókat: kapcsolódó rendezvényekkel (főzőversenyek, tematikus workshop-ok), turisztikai programokkal (csoportos interaktív bemutatók, rendezvények) és kiadványokkal (receptúra-gyűjtemény, az útvonal ismertetése 5 nyelven).
