Description (FR): La dégradation des aliments et le gaspillage alimentaire sont des problématiques transfrontalières. En effet, présents tout au long de la chaine de valeur des produits (production, transformation, distribution et consommation), c’est durant la phase de transformation que plus de 50% du gaspillage est à déplorer, principalement dans le domaine des aliments sous emballage. Cependant, pour mesurer l’intégrité des produits sur les lignes de production, des échantillons sont prélevés et ouverts quotidiennement de manière aléatoire. En utilisant une approche statistique, l’industriel obtient une information sur l’ensemble de la production sans toutefois éliminer les emballages défectueux. Cette méthode est destructive, productive d’un grand volume de gaspillage et nivèle par le bas la date limite de consommation d’aliments sains. La solution serait donc d’analyser systématiquement chaque emballage avec une méthode non-destructive. Le projet TERAFOOD vise alors à créer un capteur compact permettant de mesurer la composition biochimique de l’atmosphère à l’intérieur des emballages et ainsi permettre leur vérification individuelle tout au long de la durée de vie des denrées. L’expertise de chaque partenaire technique de part et d’autre de la frontière est alors indispensable pour mener à bien ce projet et proposer une véritable approche interdisciplinaire.
Read more Description (EN): Food decay and food waste are cross-border problems. While a problem all along the product value chain (production, processing, distribution and consumption), the processing phase is when more than 50% of the waste actually takes place, principally in the packaged foods sector. However, to measure the integrity of the products on the production lines, samples are taken and opened every day on a random basis. By using a statistical approach, the manufacturer obtains information about the overall production without, however, eliminating defective packaging. This method is destructive, produces a large volume of waste and lowers the consumption date limits of fresh foods. The solution would, therefore, be the systematic analysis of every packaging with a non-destructive method. The TERAFOOD project therefore aims to create a compact sensor enabling the measurement of the biochemical composition of the atmosphere inside the packaging and thus allow individual checks throughout the lifetime of the commodities. The expertise of each technical partner on either side of the border is, therefore, essential to carry out this project and propose a truly interdisciplinary approach.

Read more Achievements (FR): Le projet TERAFOOD développe un capteur non intrusif pour le contrôle de la qualité des aliments emballés, jusqu'au niveau d'un prototype testé opérationnellement. Après la réalisation de tous les éléments technologiques nécessaires, une première génération de la partie photonique du capteur a été fabriquée et mesurée entre septembre et décembre 2018. Une version optimisée a été produite durant les premiers mois de 2019. Les propriétés mesurées sur cette dernière sont parmi les meilleures jamais rapportées pour les guides d'ondes et les résonateurs THz. Vers la fin de 2019, on a conçu la cellule à gaz qui sera utilisée pour le reste du projet pour tester le capteur dans des conditions contrôlées, en simulant un emballage alimentaire. La livraison de cette cuve, prévue en avril 2020, a rencontré plusieurs délais suite à la complexité du design et la difficulté de la fabrication. L’arrêt de travail causé par le COVID-19 et la perte du colis par le livreur a nécessité une deuxième fabrication. Cette cellulle a finalement été livrée en octobre 2020 et son bon fonctionnement (tenu du vide et transparence pour les ondes THz) a été validé. Elle est prête pour les premiers tests de capteur photoacoustique dans un atmosphère gazeux en presence de traces de gaze indicateurs de détériorisation des aliments. . Durant la période octobre – décembre 2020, la partie mécanique du capteur a été correctement évalué dans la cellule à gaz conçue. Ceci signifie un résultat très important afin de pouvoir passer à la caractérisation du capteur complet dans des atmosphères calibrés. Le début de 2020 a été marqué par l'éruption de la crise sanitaire mondiale dû au coronavirus. Ceci a impacté la gestion du projet durant toute l'année 2020 sans pour autant limiter le bon déroulement scientifique du projet. Les échanges avec le comité technique et entre partenaires ont de manière efficace été remplacés par des réunions en ligne. Les activités experimentales et technologiques ont été suspendues pendant 4 mois (mars-juin 2020). Ceci a également impliqué une annulation définitive du deuxième atelier d'introduction et le report des ateliers de démonstration. Quelques travaux préparatoires ont pu être effectués afin de reprendre de manière rapide et efficace la démonstration du capteur complète à partir de septembre 2020. La prolongation (voire le durcissement) des mesures sanitaires ont malheureusement davantage retardé les travaux expérimentaux. En plus, les quelques expériences qui ont pu être menées ont révélé un défaut dans le materiau de base. Une toute nouvelle fabrication a donc été lancée en décembre 2020. En total, le capteur développé est donc passé par générations différentes, chaque nouvelle génération remédiant aux déficiences des mesures de la précédente. Entre temps le projet a néanmoins reçu une attention très importante dans la presse écrite et audiovisuelle durant 2020 (reportage télévisé Euronews, article Les Echos, podcast France Inter, ...). En ce qui concerne la communication et la promotion du projet, tous les partenaires du projet (BE : Food2Know (F2K) PRG & FMFP de l'UGent, et Flanders'Food (FF); FR : VMicro SAS, LPCA ULCO Dunkerque, THz Photonics IEMN Villeneuve d'Ascq) communiquent à tour de rôle des flashs-info qui expliquent leur expertise spécifique au sein du projet en termes simples sur la base des résultats obtenus. Ces messages sont publiés sur le site web du projet (https://terafood.iemn.fr). Ensuite, les deux organistations clusters d'excellence F2K et FF se chargent d'une large diffusion parmi leur réseau de membres. Dans le cadre de l'activité de valorisation du projet, F2K a également mis en place un conseil consultatif industriel et sectoriel avec une représentation équilibrée en France, en Flandre et en Wallonie. Ce conseil est actuellement composé de 9 membres. Ils assurent un rôle consultatif durant des sessions "tables-rondes" lors des réunions annuelles sur les aspects pratiques des emballages alimentaires intelligents et les besoins des utilisateurs agro-alimentaires. Trois réunions ont eu lieu jusqu'à présent (le 12/06/2017 dans le laboratoire du LPCA à Dunkerque, le 22/3/2018 à l'IEMN, et le 21/3/2019 dans les locaux de F2K à Gand; le dernier prévu au 27/3/2020 a été annulé suite au COVID). Le projet bénéficie d'une grande visibilité auprès du grand public et du secteur alimentaire. Le projet a déjà reçu deux invitations à des événements organisés par le secteur agro-alimentaire et a participé à un panel débat sur la numérisation dans l'industrie alimentaire(lors de l'événement annuel INTERREG 2019 à Courtrai le 19/11/2019). De plus, il a été mis en avant par les services de la CE et est apparu (mars 2020) dans le programme "Smart Regions" de la chaîne Euronews. Une vidéo promotionnelle a été réalisée fin 2019 suite au pitch gagnant lors de l'événement annuel INTERREG 2018. Le projet connaît également un important rayonnement scientifique, avec à ce jour 19 contributions à des conférences nationales et internationales (dont 7 présentations de posters et 12 exposés) et 7 articles publiés dans la littérature professionnelle internationale. Les partenaires portent également une attention particulière à la vulgarisation de cette nouvelle technologie auprès des industriels et du grand public en organisant un atelier d'introduction aux technologies THz ("Terahertz pour les nuls") le 31 janvier 2019 dans les locaux du PRG à UGent. Malheureusement, la crise sanitaire mondiale suite à la pandémie COVID-19 a drastiquement contrecarré toutes les actions de valorisation et promotion prévues depuis mars 2020. Après plusieurs tentatives de reports des ateliers, réunions du conseil industriel et sessions de brainstorming, et en raison des restrictions sanitaies constantes et de l'incertitude quant à l'avenir, il a été décidé, en consultation avec Interreg, de remplacer les ateliers de démonstration et les sessions de brainstorming par un événement final physique. Afin de collecter les informations nécessaires au développement de la feuille de route technologique, l'approche des sessions de brainstorming physiques a été transformée en un format en ligne flexible où des réunions physiques avec les entreprises sont prévues si possible au cours du dernier semestre du projet. Dans tous les cas, toutes les actions menées et résultats obtenus dans le cadre du projet sont en grande partie le résultat de la complémentarité scientifique transfrontalière. Le croisement des compétences des microbiologistes alimentaires du laboratoire FMFP d'UGENT et des spécialistes de la spectroscopie THz du laboratoire LPCA de Dunkerque a par exemple permis de démontrer pour la première fois que deux techniques tres différents d'analyse de l'atmosphère d'emballage alimentaire donnent des résultats de mesure de concentration de COV quasiment identiques en précision. Ce résultat est révolutionnaire et justifie le principe de ce projet. Au début de la dernière année du projet (2020), les trois principes (optique, acoustique et mécanique) qui constituent la base du capteur alimentaire ont été démontrés. Les calculs des chercheurs du groupe PRG ont ainsi été confirmés expérimentalement lors de plusieurs campagnes de mesure à l'IEMN. Cela a permis de valider tous les éléments constituants du capteur et on peut s'attendre à la première démonstration de la détection des COV avec le capteur TERAFOOD dans une cellule à gaz contrôlée simulant un emballage alimentaire. Le banc est construit et la première génération de capteurs complets a été fabriquée durant le premier semestre de 2020. Cette nouvelle technologie est également protégée par une demande de brevet international. La revendication de priorité a été déposée le 28/1/2019 et le rapport de recherche de l'OEB considère toutes les revendications comme innovantes et originales. La demande de brevet international a ensuite été déposée le 28/1/2020. La demande PCT a été publiée sous le numéro WO 2020/157022 le 6 août 2020. Vmicro, UGENT et le CNRS se partagent cette invention. En conclusion, le projet a progressé de manière plus que satisfaisante jusqu'à présent, tant sur le plan scientifique que sur le plan de la visibilité auprès des acteurs industriels, du grand public et des autorités de gestion officielles.
Read more Achievements (EN): The TERAFOOD project develops a non-intrusive sensor for the quality control of packaged food, up to the level of an operationally tested prototype. After the realisation of all the necessary technological elements, a first generation of the photonics part of the sensor was manufactured and measured between September and December 2018. An optimised version was produced in the first months of 2019. The properties measured on the latter are among the best ever reported for THz waveguides and resonators. Towards the end of 2019, the gas cell was designed to be used for the rest of the project to test the sensor under controlled conditions, simulating food packaging. The delivery of this tank, scheduled for April 2020, met several deadlines due to the complexity of the design and the difficulty of manufacturing. The stoppage of work caused by COVID-19 and the loss of the parcel by the deliveryman required a second manufacture. This cellulle was finally delivered in October 2020 and its proper functioning (holding the vacuum and transparency for THz waves) has been validated. It is ready for the first photoacoustic sensor tests in a gaseous atmosphere in the presence of gauze traces indicators of food deterioration. . During the period October — December 2020, the mechanical part of the sensor was properly evaluated in the designed gas cell. This means a very important result in order to be able to move to the characterisation of the complete sensor in calibrated atmospheres. The beginning of 2020 was marked by the eruption of the global health crisis caused by the coronavirus. This impacted the management of the project throughout 2020 without limiting the scientific progress of the project. Exchanges with the Technical Committee and between partners have been effectively replaced by online meetings. Experimental and technological activities were suspended for 4 months (March-June 2020). This also involved a definitive cancellation of the second introductory workshop and the postponement of demonstration workshops. Some preparatory work was carried out in order to quickly and efficiently resume the demonstration of the complete sensor from September 2020. The extension (or even hardening) of health measures has unfortunately delayed further experimental work. In addition, the few experiments that could be conducted revealed a defect in the base material. A brand new manufacturing was launched in December 2020. In total, the sensor developed went through different generations, each new generation remedying the deficiencies of the measurements of the previous one. Meanwhile, the project received very important attention in the print and audiovisual press during 2020 (televisioned Euronews, article Les Echos, podcast France Inter,...). As regards communication and promotion of the project, all project partners (BE: UGent’s Food2Know (F2K) PRG & FMFP, and Flanders’ Food (FF); EN: VMicro SAS, LPCA ULCO Dunkerque, THz Photonics IEMN Villeneuve d’Ascq) communicate in turn flashes-info that explain their specific expertise within the project in simple terms based on the results obtained. These messages are published on the project website (https://terafood.iemn.fr). Then, the two cluster organisations of excellence F2K and FF take care of a wide dissemination among their network of members. As part of the project’s valorisation activity, F2K has also set up an industrial and sectoral advisory council with a balanced representation in France, Flanders and Wallonia. The Board is currently composed of 9 members. They provide an advisory role during roundtable sessions at annual meetings on the practical aspects of smart food packaging and the needs of agri-food users. Three meetings have been held so far (on 12/06/2017 in the LPCA laboratory in Dunkirk, 22/3/2018 at the IEMN, and on 21/3/2019 at F2K in Ghent; the last scheduled for 27/3/2020 has been cancelled following COVID). The project is highly visible to the general public and the food sector. The project has already received two invitations to events organised by the agri-food sector and participated in a panel debate on digitalisation in the food industry (at the annual INTERREG 2019 event in Kortrijk on 19/11/2019). In addition, it was highlighted by EC services and appeared (March 2020) in the “Smart Regions” programme of the Euronews channel. A promotional video was made at the end of 2019 following the winning pitch at the annual INTERREG 2018 event. The project also has significant scientific influence, with 19 contributions to national and international conferences (including 7 poster presentations and 12 presentations) and 7 articles published in international professional literature. The partners also pay particular attention to the extension of this new technology to industrialists and the general public by organising a workshop to introduce THz technologies (“Terahertz for Dummies”) on 31 January 2019 at the premises of the PRG in UGent. Unfortunately, the global health crisis following the COVID-19 pandemic has drastically thwarted all recovery and promotion actions planned since March 2020. After several attempts to postpone workshops, industrial council meetings and brainstorming sessions, and due to constant sanitisation restrictions and uncertainty about the future, it was decided, in consultation with Interreg, to replace the demonstration workshops and brainstorming sessions with a physical final event. In order to collect the information necessary for the development of the technology roadmap, the approach of the physical brainstorming sessions has been transformed into a flexible online format where physical meetings with companies are planned if possible during the last semester of the project. In all cases, all actions and results achieved under the project are largely the result of cross-border scientific complementarity. For example, by combining the skills of food microbiologists from UGENT’s FMFP laboratory with THz spectroscopy specialists in Dunkirk’s LPCA laboratory, for the first time, two very different techniques for analysing the food packaging atmosphere yield almost identical precision VOC concentration measurement results. This result is revolutionary and justifies the principle of this project. At the beginning of the last year of the project (2020), the three principles (optical, acoustic and mechanical) that form the basis of the food sensor were demonstrated. The calculations of the researchers of the PRG group have thus been confirmed experimentally during several measurement campaigns at the IEMN. This enabled the validation of all the constituent elements of the sensor and the first demonstration of VOC detection with the TERAFOOD sensor in a controlled gas cell simulating food packaging can be expected. The bench is built and the first generation of complete sensors was manufactured in the first half of 2020. This new technology is also protected by an international patent application. The priority claim was filed on 28/1/2019 and the EPO search report considers all claims to be innovative and original. The international patent application was subsequently filed on 28/1/2020. The PCT application was published under number WO 2020/157022 on August 6, 2020. Vmicro, UGENT and CNRS share this invention. In conclusion, the project has progressed more than satisfactorily so far, both scientifically and in terms of visibility to industrial actors, the general public and official managing authorities.
