Le développement de nouvelles technologies, l’acquisition de connaissances ou la découverte de solutions lors de projets de recherche ne dépasse pas la phase de la recherche et parvient difficilement jusqu’au groupe cible, à savoir les entreprises. Le pas entre la phase de recherche et la mise en œuvre des innovations technologiques est parfois trop grand, car certains facteurs socioéconomiques ne sont pas pris en considération ou ne sont pas connus. Ainsi, les entreprises continuent d’utiliser les connaissances existantes (parfois désuètes ou incomplètes) et le passage des technologies traditionnelles aux technologies innovantes reste un processus compliqué. Au cours du projet VEG-i-TEC, des lignes de transformation modulaires représentatives de l’industrie de transformation des légumes et pommes de terre seront construites. Il sera ainsi possible d’évaluer l’impact de différents traitements unitaires, parmi lesquels ces technologies innovantes, des points de vue de la qualité du produit fini, de la conception hygiénique et de la consommation d’eau et d’énergie. En outre, l’impact économique, écologique et social de ces technologies sera étudié. Cette approche multidisciplinaire permet d’offrir une réponse complète aux entreprises en ce qui concerne le choix éventuel d’une technologie donnée et de la manière de la mettre en œuvre dans l’entreprise.

De ontwikkeling van nieuwe technologieën, de verwerving van kennis of de ontdekking van oplossingen tijdens onderzoeksprojecten blijft steken in de onderzoeksfase en bereikt nauwelijks de doelgroep, namelijk de ondernemingen. De stap van de onderzoeksfase naar de implementatie van technologische innovaties is soms te groot omdat bepaalde socio-economische factoren onbekend zijn of niet in aanmerking worden genomen. Zo blijven ondernemingen bestaande (soms verouderde of niet complete) kennis gebruiken en blijkt de overstap van traditionele technologieën naar innovatieve technologieën een ingewikkeld proces. Tijdens het project VEG-i-TEC zullen modulaire proceslijnen worden opgebouwd die representatief zijn voor de groente- en aardappelverwerkende industrie. Dit maakt het mogelijk om het effect van verschillende eenheidsbewerkingen waaronder deze innovatieve technologieën te evalueren afhankelijk van de kwaliteit van het eindproduct, het hygiënisch ontwerp alsook het water- en energieverbruik. Ook kan de economische, ecologische (duurzaamheid) en/of sociale impact van deze technologieën worden bestudeerd. Deze multidisciplinaire aanpak maakt het mogelijk om de ondernemingen een volledig antwoord te bieden over het al dan niet kiezen van een welbepaalde technologie en haar implementatie in het bedrijf.

The development of new technologies, the acquisition of knowledge or the discovery of solutions during research projects does not go beyond the research phase and barely reaches the target group, namely the companies. The gap between the research phase and the implementation of technological innovations is sometimes too wide because certain socio-economic factors are not taken into account or are not known. As a result, companies continue to use existing knowledge (sometimes outdated or incomplete) and the transition from traditional technologies to innovative technologies remains a complicated process. During the VEG-i-TEC project, modular processing lines will be built that are representative of the vegetable and potato processing industry. This will make it possible to evaluate the impact of different unitary processing steps, including these innovative technologies, from the perspective of the quality of the finished product, the hygienic design and the consumption of water and energy. In addition, the economic, ecological and social impact of these technologies will be studied. This multi-disciplinary approach offers a complete answer to companies regarding the choice of a given technology and how to implement it in the company.

Achievements (FR):

VEG-i-TEC est une plate-forme d'essais transfrontalière pour la mise en oeuvre de technologies de pointe en matière de transformation alimentaire, d'emballage, de capteurs de suivi des consommations en eau et énergie ou encore permettant de suivre la qualité des végétaux transformés. Nous disposons chez les partenaires des infrastructures pilotes dont certaines sont déjà présentes ou mises en place au cours du projet. Le caractère innovant et l'optimisation de certains procédés de production, notamment la conception hygiénique et l'utilisation efficace de l'eau et de l'énergie, ainsi que leur contrôle, ont été intégrés dans la construction des nouvelles infrastructures. Les plateformes d'essais disponibles chez les partenaires sont complémentaires et servent à la démarche de recherche appliquée, de formation et d'activités de démonstration pour innover et optimiser avec les industriels de transformation des légumes et pommes de terre. Nous nous devons d'avoir une coopération efficace non seulement entre les partenaires du projet (Adrianor, INRAE, Howest et UGent), mais aussi avec l'Industrie de transformation des légumes et des pommes de terre et leurs fournisseurs (y compris les constructeurs de machines et fournisseurs de technologie sur les traitements de l'eau et des capteurs), en les invitant à participer activement au groupe consultatif du projet. Après avoir établi un état de l'art des pratiques des industriels, cinq domaines prioritaires ont été identifiés pour améliorer les procédés de transformation : la productivité des machines (en tenant compte de la qualité de l'eau et de sa consommation), la sécurité des opérateurs, la conception hygiénique des équipements, l'efficacité énergétique et la qualité des produits finis transformés. Lors de la réalisation des analyses d'inventaire chez plusieurs entreprises de transformation de légumes (frais, coupés et surgelés) et de pommes de terre (surgelées), il est apparu que les données nécessaires à l'établissement de bilans massiques et énergétiques corrects ne sont pas disponibles en quantité suffisante (exemple : pas de données sur les consommations d'eau et d'énergie pour différentes opérations unitaires). Par conséquent, de nombreuses hypothèses ont dû être faites, entrainant un niveau d'incertitude important pour réaliser une analyse du cycle de vie d'un procédé de transformation. Sur les lignes pilotes des partenaires VEG-i-TEC, des compteurs d'énergie et de débit ont été installés afin de mettre au point la saisie des données, la visualisation des consommations, les alarmes et la création de rapports, pour lesquels les outils nécessaires sont disponibles, certains pouvant être facilement mis en oeuvre dans les entreprises. D'autres capteurs sont également ajoutés pour la surveillance de certains procédés (par exemple le suivi de la qualité de l'eau). Toutes ces données sont stockées en continue dans des bases de données (au format CSV et dans le cloud). Elles devraient permettre la génération de tableaux de bord permettant de bien caractériser les procédés, de les comparer entre eux et de les ajuster de manière objective. Les potentiels d'économie de consommation d'électricité et d'eau devraient plus facilement être mis en évidence. La recherche en matière d'hygiène des surfaces comporte de multiples facettes : conception hygiénique des équipements, la recherche de procédés de nettoyage innovants, en particulier les mousses en écoulement, et une étude sur la contamination des surfaces en lien avec le risque présenté par les zones d'éclaboussures et des interfaces air-liquide-surface bien présents. Il a été démontré que l'écoulement de mousse permet l'élimination de la contamination de surface dans des conditions d'écoulement à faible débit et peu d'eau (mousse à 50% d'eau) de façon plus efficace qu'un nettoyage en place classique équivalent. Par ailleurs, en ce qui concerne les conséquences de la présence de zones d'éclaboussures, le rôle de certains paramètres (taille et caractère hydrophile/hydrophobe des particules, caractère hydrophile/hydrophobe et topographie des matériaux) sur la structure des dépôts à la suite du séchage des gouttelettes contaminées a été identifié. Les essais réalisés à ce jour ont permis de mettre en évidence que les bactéries ciblées dans le projet présentaient des aptitudes très différentes à contaminer les matériaux aux interfaces air-liquide (quantité de biofilm, structure, résistance au décrochement, ...). Afin de recueillir des informations supplémentaires (influence de la nature du matériau, de la température, de l'hygrométrie...) un cas d'étude est en cours au sein d'une entreprise afin de mettre en oeuvre une analyse environnementale approfondie. Suivant le type de (ré)utilisation de l'eau, l'accent a été mis sur les micropolluants tels que les produits phytosanitaires qui peuvent potentiellement entraver la réutilisation ou même le rejet, et sur la manière de les éliminer à l'aide d'ozone et/ou de charbon actif. Un système de traitement de l'eau de blanchiment a été testé à l'échelle du laboratoire pour sa ré-utilisation. Le procédé sera testé à l'échelle pilote au cours de la prochaine période du projet. VEG-i-TEC est également l'un des 17 projets du portefeuille de projets GOTOS3. GOTOS3 offre à VEG-i-TEC un réseau pour aussi par ce biais diffuser les résultats en contribuant aux objectifs du projet. En outre, la diffusion des résultats se fait via le site web (www.veg-i-tec.eu), des médias sociaux (portail de recherche ResearchGate, LinkedIN (https://www.linkedin.com/company/11503917), twitter (#vegitec)), de matériels pédagogiques, de publications ou encore d'évènements organisés dans les deux pays pour l'Industrie, le grand public et d'autres institutions de recherche.

Achievements (EN):

VEG-i-TEC is a cross-border testing platform for the implementation of state-of-the-art technologies in food processing, packaging, water and energy consumption monitoring sensors or for monitoring the quality of processed plants. We have pilot infrastructures in our partners, some of which are already present or set up during the project. The innovative nature and optimisation of certain production processes, including hygienic design and the efficient use of water and energy, as well as their control, have been integrated into the construction of the new infrastructure. The testing platforms available from the partners are complementary and are used for applied research, training and demonstration activities to innovate and optimise with vegetable and potato processing manufacturers. We must have effective cooperation not only between the project partners (Adrianor, INRAE, Howest and UGent), but also with the Vegetable and Potato Processing Industry and their suppliers (including machinery manufacturers and suppliers of water and sensor treatment technology), inviting them to participate actively in the project advisory group. After establishing a state of the art of industrial practices, five priority areas were identified to improve processing processes: machine productivity (taking into account water quality and consumption), operator safety, hygienic equipment design, energy efficiency and quality of processed finished products. When carrying out inventory analyses at several vegetable processing companies (fresh, cut and deep-frozen) and potatoes (frozen), it became apparent that the data necessary for the establishment of correct mass and energy balances are not available in sufficient quantities (example: no data on water and energy consumption for different unit operations). As a result, many hypotheses had to be made, resulting in a significant level of uncertainty to perform a life-cycle analysis of a transformation process. On the pilot lines of the VEG-i-TEC partners, energy and flow meters have been installed to develop data entry, consumption visualisation, alarms and reporting, for which the necessary tools are available, some of which can be easily implemented in companies. Other sensors are also added for monitoring certain processes (e.g. water quality monitoring). All this data is stored continuously in databases (in CSV format and in the cloud). They should allow the generation of dashboards that allow processes to be well characterised, compared and adjusted objectively. The potential for saving electricity and water consumption should be more easily highlighted. Surface hygiene research is multifaceted: hygienic design of equipment, the search for innovative cleaning processes, in particular flow foams, and a study on surface contamination related to the risk presented by the splash zones and the well-present air-liquid-surface interfaces. Foam flow has been shown to remove surface contamination under low flow and low water (50 % water foam) conditions more efficiently than equivalent conventional cleaning in place. Furthermore, as regards the consequences of the presence of splash zones, the role of certain parameters (size and hydrophilic/hydrophobic character of particles, hydrophilic/hydrophobic character and material topography) on the structure of deposits following drying of contaminated droplets has been identified. The tests carried out to date have shown that the bacteria targeted in the project have very different abilities to contaminate materials at air-liquid interfaces (quantity of biofilm, structure, resistance to pick-up,...). In order to collect additional information (influence of the nature of the material, temperature, humidity...) a case study is under way within a company in order to implement a thorough environmental analysis. Depending on the type of (re)use of water, the focus has been on micropollutants such as plant protection products that can potentially hinder reuse or even discharge, and how to dispose of them using ozone and/or activated carbon. A bleaching water treatment system has been tested at the laboratory level for reuse. The process will be pilot-scaled during the next project period. VEG-i-TEC is also one of 17 projects in the GOTOS3 project portfolio. GOTOS3 offers VEG-i-TEC a network to also disseminate the results by contributing to the objectives of the project. In addition, the results are disseminated via the website (www.veg-i-tec.eu), social media (ResearchGate portal, LinkedIN (https://www.linkedin.com/company/11503917), twitter (#vegitec)), educational materials, publications and events organised in both countries for industry, the general public and other research institutions.
