AVENIRS, Crafts, European Vector in Intelligent Nutrition, Responsible for Health

La boulangerie-pâtisserie artisanale fait face à une concurrence accrue des grandes enseignes, les artisans indépendants voient leurs parts de marché passer sous la barre des 50%. Pour maintenir et accroître leur position, ils n’ont d’autre choix que d’innover pour s’adapter aux attentes des consommateurs de plus en plus exigeants en produits sains et de qualité. L’objectif du projet AVENIRS est d’accompagner les entreprises artisanales de boulangerie-pâtisserie françaises et flamandes à innover sur une gamme de produits artisanaux à valeur bien-être et santé. Le projet se déroule en quatre étapes : cibler les produits de la gamme « Bien-être et santé » ; les concevoir en produits finis ; établir des outils de recommandation simples et adaptés à l’artisan sous la forme d’un guide de bonnes pratiques ; mettre en place un dispositif d’accompagnement et de formation pour permettre aux entreprises d’être formées à la production et à la vente de ces produits. Le projet renforce ainsi l’économie de proximité sur la zone transfrontalière en associant des acteurs français et flamands possédant un savoir-faire en boulangerie avec des structures d'accompagnements économiques spécialisées sur l'artisanat, des TPE/PME et des industriels et scientifiques.

De ambachtelijke brood- en banketbakkerij heeft te kampen met een steeds grotere concurrentie van de grote ketens. De zelfstandige bakkers zien hun marktaandeel onder de 50% zakken. Om hun positie te behouden en te versterken, hebben ze geen andere keuze dan te innoveren om in te spelen op de verwachtingen van de consument die steeds veeleisender wordt en gezonde kwaliteitsproducten verlangt. Het doel van het project AVENIRS is ambachtelijke brood- en banketbakkers in Frankrijk en Vlaanderen bij de innovatie te begeleiden met een gamma ambachtelijke producten met een gezondheids- en welzijnsvoordeel. Het project verloopt in vier fasen: focussen op producten van het gamma ‘Welzijn en gezondheid’; eindproducten ontwikkelen; eenvoudige en voor de ambachtelijke bakker geschikte aanbevelingen verstrekken in de vorm van een gids van goede praktijken; een structuur voor begeleiding en opleiding ontwikkelen om de ondernemingen de kans te geven opleidingen te volgen over de productie en de verkoop van deze producten. Op die manier versterkt het project de buurteconomie in de grenszone door de Franse en Vlaamse actoren met knowhow op het gebied van bakkerij te verenigen met structuren voor gespecialiseerde economische begeleiding rond ambachtelijk werk, micro-ondernemingen en kmo’s, industriëlen en wetenschappers.

The artisanal bakery and pastry industry is facing increased competition from the major chains, with independent artisans seeing their market share fall below 50%. To maintain and increase their position, they have no choice but to innovate to meet the expectations of consumers who are increasingly demanding healthy and quality products. The objective of the AVENIRS project is to support French and Flemish bakery and pastry artisan businesses to innovate on a range of artisan products with a well-being and health value. The project is divided into four stages: targeting products from the “Well-being and Health” range; designing them into finished products; establishing simple recommendation tools adapted to the artisan in the form of a guide of good practices; and setting up a support and training system to enable companies to be trained in the production and sale of these products. The project thus strengthens the local economy in the cross-border area by bringing together French and Flemish stakeholders with bakery know-how with economic support structures specialised in artisan businesses, very small and medium-sized businesses and industrialists and scientists.

Quel pain mangerez-vous demain ? Les boulangers-pâtissiers artisans français et flamands repensent leur offre et concilient plaisir, santé et savoir-faire artisanal pour répondre aux nouvelles envies des consommateurs ! La boulangerie-pâtisserie artisanale est un secteur transfrontalier stratégique au niveau de l’économie présentielle. L’alimentation santé et bien-être est une tendance croissante sur le marché alimentaire français, belge et européen en général. En particuliers, en boulangerie pâtisserie, cette tendance se traduit par une demande des clients pour des produits moins gras, moins sucrés, enrichis en fibres etc. La participation active des entreprises artisanales de l’alimentaire est ainsi nécessaire car elles représentent une part significative du marché de l’agroalimentaire et sont des acteurs essentiels de l’équilibre social des villes et villages. Confrontés à une concurrence de plus en plus développée de leurs concurrents de l’industrie et de la grande distribution , les artisans boulangers/pâtissiers possèdent un fort potentiel d’innovation-produit mais n’ont pas assez de moyens humains et de temps à y consacrer ni de connaissances techniques sur le sujet de la nutrition. C'est l'ambition du projet transfrontalier AVENIRS, (l'Artisanat, Vecteur Européen en Nutrition Intelligente et Responsable pour la Santé) d'accompagner les artisans français et flamands, confrontés aux mêmes évolutions du marché, à innover. Piloté par la Chambre de Métiers et de l'Artisanat Hauts-de-France avec la collaboration d’Unilasalle, de Syntra West, du POMWVL, de Lesaffre, de Sasa Demarle et des organisations professionnelles françaises et flamandes de boulangerie/pâtisserie, le projet rassemble des savoir-faire, expertises et compétences dans 4 grands domaines : 1.le savoir-faire artisanal de la boulangerie/pâtisserie : 2.la connaissance et la rigueur scientifique en nutrition santé : 3.l'expertise technique des fournisseurs 4.l'accompagnement et la formation des entreprises. Le projet AVENIRS s'est fixé comme objectif de réalisation sur les 4 années (2018-2021) de créer et mutualiser conjointement un dispositif d’accompagnement à l’innovation pour 80 boulangerie-pâtisseries artisanales françaises et flamandes (50 en France et 30 en Flandre) afin de leur permettre de répondre à la tendance alimentaire « bien-être et santé » de plus en plus plébiscitée par les consommateurs. En s’engageant dans ce projet original et ambitieux, les partenaires français et flamands ont, durant 4 années, œuvré à améliorer la compétitivité des entreprises artisanales en : 1.incrémentant au sein de ces petites unités de production des transferts technologiques significatifs 2.en diversifiant leur offre de produits 3.en valorisant la filière artisanale Pour cela ils ont créé et développé conjointement un dispositif d’accompagnement et de formation à l’innovation à destination des entreprises françaises et flamandes ciblées. Ce dispositif d’accompagnement comprend : -Une gamme de 13 recettes artisanales et innovantes de pains, viennoiseries et pâtisseries avec des bienfaits nutritionnels que les artisans français et flamands découvrent et prennent en main lors d’une journée de formation -Un accompagnement sur les principales notions nutritionnelles des produits, le règlement publicitaire européen des allégations nutritionnelles et de santé et les règles sanitaires. -Un accompagnement commercial pour aider l’artisan à promouvoir et vendre ses produits. A cela s’ajoute la mise à disposition de l’usage des 2 marques créées sur chacun des versants pour désigner la gamme de produits : la marque « Un grain de plaisir » en France et la marque « Da Mag ! » en Flandre. Les partenaires français et flamands étaient particulièrement soucieux de pouvoir offrir un accompagnement transfrontalier « intégré » aux artisans français et flamands de manière à proposer des recettes respectant le savoir-faire artisanal et répondant à la demande des consommateurs, demande qui selon les cultures alimentaires locales peuvent être assez variée, d’où la proposition d’une large gamme de produits. Ainsi les partenaires se sont attachés à offrir un même accompagnement composé de recettes, de conseils et recommandations en règlementations sanitaires, en vente et marketing, tout en respectant les spécificités de consommation et de vente locales plébiscités par les consommateurs et réclamées par les artisans. Il faut noter ici, que La zone de coopération s’étend sur le versant français aux 5 départements de la Région Hauts-de-France et sur le versant belge à la Province de Flandre Occidentale. Si la proximité immédiate de la frontière est le lieu de nombreux échanges commerciaux et ou de personnes, il faut bien constater qu’au-delà d’une certaine distance les échanges transfrontaliers se raréfient. Néanmoins, qu’on soit à Bruges ou Beauvais, à Corbie ou Oudenburg, à Maroilles ou Izegem, les territoires de cette zone sont confrontés aux mêmes enjeux économiques et sociaux portant sur le maintien du commerce de proximité, la défense d’une alimentation de qualité, durable et saine, le développement des circuits courts, la préservation du savoir-faire et des traditions culinaires. S’ajoute à cela, la nécessité de se diversifier et d’innover face à une concurrence accrue des grandes enseignes (Auchan, Delhaize, Carrefour, Colruyt…). Au-delà des différences bien connues entre la France et la Belgique (exemple le fait de manger le midi une tartine en Belgique et pas en France), s’ajoute ici la langue pour la province flamande ainsi que des spécificités locales de consommation. Pour toutes ces raisons le projet AVENIRS a opté pour une déclinaison d’une marque en 2 langues : « Un grain de plaisir » sur le versant français et « Da Mag ! » pour la versant flamand. Mais derrière ces 2 noms, il s’agit bien du même service rendu aux artisans français et flamands. La phase innovation des produits, dirigée par Unilasalle, s’est étalée de septembre 2018 à décembre 2020. Elle a été source de nombreux enseignements nouveaux pour tous les partenaires français et flamands : Au niveau des ingrédients, de la nutrition, des formulations culinaires, des techniques d’analyses sensorielles menées à Beauvais et à Bruges. Les 3 journées de production rassemblant boulangers pâtissiers formateurs français et flamands, une fois à la CMA HDF, une fois à Bruges et une fois chez Lesaffre ont été riches d’enseignements et de partages : les boulangers pâtissiers-français et flamands ont proposées des améliorations aux recettes avec leur savoir-faire. Une fois les produits finalisés et validés, les partenaires se sont attelés à la réalisation des supports de vente et de promotion de la gamme de produits. La stratégie marketing avait déjà été abordée en début de projet au moment de l’élaboration de la stratégie de communication du projet. La particularité ici est d’avoir 3 cibles de communication : les partenaires institutionnels, les artisans et les consommateurs. La cellule communication, composée d’un représentant de chaque partenaire, mise en place dès 2018, a permis de fixer ensemble le positionnement marketing des marques, la création de logos et les messages marketing à faire passer. La particularité du travail transfrontalier a consisté ici à travailler avec 2 langues le français et le néerlandais. Il fallait s’assurer que l’on parle tous de la même chose. C’est au cours des ateliers créatifs mais aussi au contact des artisans que les partenaires ont constaté que si les produits et l’accompagnement offerts aux artisans étaient bien identiques, les messages à faire passer en Flandre pouvaient différer en fonction des cultures alimentaires locales ou encore des pratiques de formation des établissements français et flamands. C’est ainsi que les produits français et flamands pouvaient avoir des formes différentes selon les usages enseignés chez Syntra West et à la CMA HDF et selon les habitudes de consommation de la population. De même que pour la vente en magasin, au final les supports de vente, bien que conçus de manière identique sur les 2 versants, se sont déclinés en adaptant les usages ; ainsi en France, le dépliant présentant la gamme et la démarche projet, les fiches produits, les vidéos courtes de présentation ont été développés, en Flandre, c’est surtout le dépliant de la gamme qui a été utilisé car les artisans ont fait savoir aux partenaires flamands qu’ils ne souhaitaient pas avoir trop de PLV en magasin. Sur le plan sanitaire et réglementaire, les 2 pays ne sont pas soumis aux mêmes lois concernant la définition d’une boulangerie et de la méthode de fabrication du « Pain ». De même, la règlementation sanitaire qui s’impose aux artisans boulangers pâtissiers n’est pas là même sur les 2 versants. Hormis ces considérations, l’ensemble des recommandations HACCP spécifiques pour les recettes sont bien identiques sur les 2 versants et ont fait l’objet d’une rédaction synthétique par Unilasalle pour chaque recette. Une fois toutes les étapes réalisées, (recettes, recommandation HACCP et outils marketing), les partenaires ont abordé début 2020, la phase accompagnement des entreprises. La CMA HDF et Syntra West, les 2 organismes de formation, ont, durant l’année 2020, construit le contenu de l’accompagnement des entreprises de manière à ce que ces dernières puissent découvrir et réaliser elle-même les recettes, comprendre les enjeux autour des bénéficies nutritionnels de chaque produit, être sensibilisé aux règlements des allégations nutritionnelles et de santé et être accompagné dans la promotion et la vente des produits. Il a été convenu que chaque artisan français et flamand signe une convention d’engagement sur la confidentialité et le respect des recettes et le bon usage des marques avec la CMA HDF et Syntra West. Le contexte sanitaire lié au Covid est venu modifier le déroulement des actions et le calendrier prévu : ainsi la CMA HDF ne pouvait démarrer l’accompagnement des entreprises en 2020 et a demandé à prolonger le projet d’un an. En effet, en charge d’un territoire 10 fois plus grand que la Flandre, le déploiement du dispositif AVENIRS sur la région Hauts-de-France nécessitait la mobilisation de 7 antennes et la formation de 14 formateurs à la gamme « Un grain de Plaisir ». A cette logistique assez lourde, s’ajoutait des tâches importantes à finaliser concernant les recettes et les supports marketing. Syntra West, de son côté, engagé dans un marché avec des consultants pour l’accompagnement à la vente des artisans, devait impérativement respecter le calendrier. Ainsi la phase accompagnement des artisans a démarré en sept 2020 en Flandre et en mars 2021 en France. Une des phases essentielles du projet a consisté à sensibiliser les bénéficiaires potentiels du projet, à savoir les 2500 artisans boulangers pâtissiers des Hauts-de-France et les 600 de la Flandre occidentale. Cette phase qui correspond pour une grande part à la phase communication a requis une importante mobilisation de la CMA HDF, du POM WVL et de Syntra West tout au long du projet. Depuis le début du projet, les partenaires ont décliné ensemble toute une panoplie d’actions et d’outils pour faire connaître auprès des artisans le dispositif AVENIRS et les inviter à se lancer dans l’innovation avec la gamme « Un grain de Plaisir » et « Da Mag ! ». A l’occasion des 4 grands évènements qui se sont déroulés sur les 2 versants et les appels à candidature, les artisans ont été informés à 6 reprises du projet. Ils ont également été informés de l’ouverture des formations « Un grain de plaisir » et « Da Mag ! » via une dizaine d’articles de presse papier et numériques qui ont été publiés, sur les 2 versants, et 2 reportages TV de grande écoute ont été diffusés en France et en Flandre. A ces actions de communication couvrant le territoire, des actions plus ciblées ont été menées par les équipes de la CMA HDF, du POMWVL et de Syntra West, avec des opérations de phoning. Le contact direct restant le moyen privilégié pour sensibiliser les artisans. Au final, 43 artisans français et 20 flamands ont été accompagnés et formés sur « Un grain de Plaisir » et « Da Mag ! ». 20% supplémentaires étaient inscrits mais ne sont pas venus. Il faut noter que le contexte Covid a eu pour conséquence chez es artisans, d’une absence importante de personnel liée à la maladie ou à des départs. Grâce au site internet « Un grain de plaisir/Da mag.fr » et aux pages Facebook, le dispositif et l’ensemble des actions de promotion ou de réalisation (journée technique, ou arrivée de la gamme chez tel ou tel artisans) ont une visibilité continue auprès des artisans, des consommateurs et des partenaires.

What bread will you eat tomorrow? French and Flemish craft bakers rethink their offer and combines pleasure, health and craftsmanship to meet the new desires of consumers! The craft bakery and pastry shop is a strategic cross-border sector at the level of the present economy. Food health and well-being is a growing trend in the French, Belgian and European food market in general. In particular, in bakery pastry, this trend results in a demand from customers for products less fat, less sweet, enriched with fiber etc. The active participation of artisanal food companies is therefore necessary they represent a significant share of the agri-food market and are essential players in the social balance of cities and villages. Faced with increasingly developed competition from their competitors in industry and retail, bakers/pastry artisans have a strong innovation-product potential but do not have enough human resources and time to devote to it or technical knowledge on the subject of nutrition. It is the ambition of the cross-border project AVENIRS, (the Craftsmanship, European Vector in Intelligent Nutrition and Responsible for Health) to support French and Flemish craftsmen, faced with the same market developments, to innovate. Led by the Chambre de Métiers et de l’Artisanat Hauts-de-France with the collaboration of Unilasalle, Syntra West, POMWVL, Lesaffre, Sasa Demarle and French and Flemish bakery/pastry professional organisations, the project brings together know-how, expertise and skills in 4 main areas: 1.The craftsmanship of bakery/pastry: 2.Knowledge and scientific rigour in health nutrition: 3.Technical expertise of suppliers 4.company support and training. The AVENIRS project has set itself the objective of achieving over the four years (2018-2021) to jointly create and pool an innovation support system for 80 French and Flemish bakery and pastry shops (50 in France and 30 in Flanders) in order to enable them to respond to the food trend “well-being and health” increasingly popular among consumers. By engaging in this original and ambitious project, the French and Flemish partners worked for 4 years to improve the competitiveness of craft companies by: 1.Increasing significant technological transfers within these small production units 2.by diversifying their product offerings 3. by enhancing the artisanal sector To this end, they have jointly created and developed an innovation support and training scheme for targeted French and Flemish companies. This accompanying arrangement shall include: —A range of 13 handmade and innovative recipes of breads, pastries and pastries with nutritional benefits that French and Flemish craftsmen discover and take in hand during a training day -Accompaniment on the main nutritional concepts of products, the European advertising regulation of nutrition and health claims and health rules. —A commercial accompaniment to help the craftsman promote and sell his products. To this is added the provision of the use of the two marks created on each side to designate the range of products: the brand “A grain of pleasure” in France and the brand “Da Mag!” in Flanders. The French and Flemish partners were particularly concerned to be able to offer cross-border support “integrated” to French and Flemish craftsmen in order to offer recipes that respect craftsmanship and meet consumer demand, a demand which, depending on local food cultures, can be quite varied, hence the proposal of a wide range of products. Thus, the partners have endeavoured to offer the same support composed of recipes, advice and recommendations in health regulations, sales and marketing, while respecting the specificities of consumption and local sales acclaimed by consumers and demanded by craftsmen. It should be noted here that the area of cooperation extends on the French side to the 5 departments of the Hauts-de-France Region and on the Belgian side to the Province of West Flanders. If the immediate proximity of the border is the place of many trade and or of people, it must be noted that, beyond a certain distance, cross-border trade is becoming scarce. Nevertheless, whether in Bruges or Beauvais, Corbie or Oudenburg, Maroilles or Izegem, the territories of this area face the same economic and social challenges relating to the maintenance of local trade, the defence of quality, sustainable and healthy food, the development of short circuits, the preservation of know-how and culinary traditions. In addition, the need to diversify and innovate in the face of increased competition from major brands (Auchan, Delhaise, Carrefour, Colruyt...). Beyond the well-known differences between France and Belgium (e.g. eating lunchtime in Belgium and not in France), is added the language for the Flemish province as well as local specificities of consumption. For all these reasons the AVENIRS project has opted for a declination of a brand in 2 languages: “A grain of pleasure” on the French side and “Da Mag!” for the Flemish side. But behind these two names, it is indeed the same service provided to French and Flemish artisans. The product innovation phase, led by Unilasalle, ran from September 2018 to December 2020. It has been a source of many new lessons for all French and Flemish partners: In terms of ingredients, nutrition, culinary formulations, sensory analysis techniques conducted in Beauvais and Bruges. The 3 days of production bringing together bakers pastry trainers French and Flemish, once at the CMA HDF, once in Bruges and once at Lesaffre were rich in teachings and sharing: the French and Flemish bakers proposed improvements to the recipes with their know-how. Once the products were finalised and validated, the partners began to realise the sales and promotion materials of the product range. The marketing strategy had already been discussed at the beginning of the project at the time of the development of the project communication strategy. The peculiarity here is to have 3 communication targets: institutional partners, craftsmen and consumers. The communication unit, composed of a representative of each partner, set up in 2018, made it possible to set together the marketing positioning of brands, the creation of logos and the marketing messages to pass through. The peculiarity of cross-border work here consisted of working with 2 languages French and Dutch. We had to make sure we all talked about the same thing. It was during the creative workshops but also in contact with craftsmen that the partners found that while the products and support offered to craftsmen were very identical, the messages to be conveyed in Flanders could differ depending on local food cultures or the training practices of French and Flemish establishments. Thus, French and Flemish products could have different forms depending on the usages taught at Syntra West and the CMA HDF and according to the consumption habits of the population. As for in-store sales, in the end the sales media, although designed identically on both sides, have been declined by adapting the uses; thus in France, the leaflet presenting the range and the project approach, the product sheets, the short presentation videos were developed, in Flanders, it is above all the leaflet of the range that was used because the craftsmen informed the Flemish partners that they did not want to have too many POS in store. In terms of health and regulation, the two countries are not subject to the same laws concerning the definition of a bakery and the method of manufacture of “Bread”. Similarly, the health regulations imposed on craftsmen bakers pastry are not there even on the two sides. Apart from these considerations, all the specific HACCP recommendations for recipes are very identical on both sides and have been the subject of a summary writing by Unilasalle for each recipe. Once all the steps were completed (recipes, HACCP recommendation and marketing tools), the partners approached the support phase of companies in early 2020. During 2020, the CMA HDF and Syntra West, the two training organisations, built the content of the support of companies so that they can discover and realise their own recipes, understand the stakes around the nutritional benefits of each product, be aware of the regulations of nutrition and health claims and be accompanied in the promotion and sale of products. It was agreed that each French and Flemish craftsman signs a commitment agreement on confidentiality and respect for recipes and good use of trademarks with CMA HDF and Syntra West. The health context related to Covid has changed the course of the actions and the planned timetable: thus the CMA HDF could not start supporting companies in 2020 and asked to extend the project by one year. Indeed, in charge of a territory 10 times larger than Flanders, the deployment of the AVENIRS system in the Hauts-de-France region required the mobilisation of 7 antennas and the training of 14 trainers in the “Un Grain de Plaisir” range. To this rather heavy logistics, was added important tasks to be finalised regarding revenue and marketing materials. Syntra West, for its part, engaged in a market with consultants to assist in the sale of craftsmen, had to respect the schedule. Thus the accompaniment phase of craftsmen started in seven 2020 in Flanders and in March 2021 in France. One of the key phases of the project was to raise awareness among the potential beneficiaries of the project, namely the 2500 artisans pastry bakers of Hauts-de-France and the 600 of West Flanders. This phase, which largely corresponds to the communication phase, required a significant mobilisation of CMA HDF, POM WVL and Syntra West throughout the project. Since the beginning of the project, the partners have jointly declined a whole range of actions and tools to make known to artisans the AVENIRS device and invite them to embark on innovation with the range “Un Grain de Plaisir” and “Da Mag!”. On the occasion of the 4 major events that took place on both sides and the calls for applications, the craftsmen were informed on 6 occasions of the project. They were also informed of the opening of the trainings “A grain of pleasure” and “Da Mag!” via a dozen paper and digital press articles that were published, on the two sides, and 2 TV reports of prime listening were broadcast in France and Flanders. To these communication actions covering the territory, more targeted actions were carried out by the teams of CMA HDF, POMWVL and Syntra West, with phoning operations. Direct contact remains the preferred way to raise awareness among craftsmen. In the end, 43 French and 20 Flemish artisans were accompanied and trained on “Un Grain de Plaisir” and “Da Mag!”. An additional 20 % were registered but did not come. It should be noted that the Covid context has resulted in a significant absence of staff due to illness or departures. Thanks to the website “A Grain of Plea/Da mag.fr” and Facebook pages, the device and all the promotion or realisation activities (technical day, or arrival of the range at one or that craftsman) have a continuous visibility among artisans, consumers and partners.

Pour expérimenter un dispositif de manière optimale, le projet travaille sur un nombre limité d'entreprises, fixé à 20% des entreprises potentiellement innovantes, soit 80 entreprises dont 50 sur les Hauts-de-France et 30 en Flandre Occidentale. L'entreprise concernée bénéficiera d'un soutien en accompagnement/formation à l'innovation. Une dizaine de produits conçus/finis seront créés, ainsi qu'un livret de recettes.

Om een optimale structuur te creëren, zal het project een beperkt aantal ondernemingen begeleiden, 20% potentieel innovatieve ondernemingen, d.w.z. 80 ondernemingen, waarvan 50 in Hauts-de-France en 30 in West-Vlaanderen. De betreffende ondernemingen zullen steun, begeleiding en opleiding rond innovatie krijgen. Er zullen een tiental eindproducten worden ontworpen en gecreëerd, evenals een receptenboekje.

To test a system in an optimal way, the project works on a limited number of companies, set at 20% of potentially innovative companies, i.e. 80 companies, 50 of which are in the Hauts-de-France and 30 in West Flanders. The company concerned will receive support in the form of innovation coaching and training. About ten designed/finished products will be created, as well as a recipe booklet.

Le projet permettra de concevoir une nouvelle gamme de produits innovants pour 80 entreprises. Le livret de recettes permettra de pérenniser les innovations développées. Ce guide permettra aux artisans d'innover et de les sensibiliser aux risques liés à l'utilisation de certains ingrédients pour la santé des populations à risques (allergiques,..). Le commerce de proximité sera ainsi favorisé.

Het project zal de mogelijkheid scheppen een nieuw gamma van innovatieve producten te ontwerpen voor 80 ondernemingen. Bovendien zal het een commercieel en marketingregister creëren, een receptenboekje en een technisch register over de voorwaarden voor voedselveiligheid en de aanpak van de risico’s van kruisbesmetting. De ontwikkelde producten zullen variëren in moeilijkheidsgraad van uitvoering. Het productengamma zal beantwoorden aan de uiteenlopende behoeften en capaciteit van de ondernemingen. Het receptenboekje zal de ontwikkelde innovaties een blijvend karakter geven. Deze gids zal de ambachtelijke bakkers helpen innoveren en hen bewust maken van de gezondheidsrisico’s van het gebruik van bepaalde ingrediënten voor risicogroepen (bv. allergieën). Zo wordt de buurthandel bevorderd.

The project will design a new range of innovative products for 80 companies. In addition, it will lead to the creation of a commercial/marketing register; a recipe book and a technical register on food safety conditions and control of cross-contamination risks. The products designed will be simple to produce and others more elaborate. The product range will cover the whole spectrum of companies' needs and capacities. The recipe booklet will make it possible to sustain the innovations developed. This guide will allow artisans to innovate and raise awareness of the risks associated with the use of certain ingredients for the health of populations at risk (allergies, etc.). Local trade will thus be encouraged.
