Description (ES): VINOVERT es un proyecto innovador y estructurante para el sector vitivinícola de la región SUDOE. Su objetivo principal es garantizar la competitividad a largo plazo de las empresas. Para ello será necesario adaptarse al nuevo tipo de demanda, enfocada a vinos considerados más "limpios" desde el punto de vista sanitario y medioambiental. VINOVERT reúne varias disciplinas de investigación (Economía, Sociología, Agronomía, Enología, Análisis químicos) con empresas (viticultores, cooperativas, comercializadoras, proveedores enológicos) y con instituciones (organismos interprofesionales, organismos de denominación de origen). El proyecto busca la aportación de soluciones que den prueba de eficacia y capacidad real de aplicación, tanto en el plano social como organizativo. Se analizarán y someterán a la opinión de los consumidores, en el marco de mercados experimentales, las soluciones a largo plazo para resolver la crisis medioambiental del sector (fomento de variedades resistentes a las plagas), a medio plazo para comprometerse en la reducción de pesticidas (conversión de explotaciones y viabilidad agroenológica) y a corto plazo para reducir los insumos en el estadio de la vinificación (sulfitos y alérgenos).
El aspecto innovador del proyecto radica en la visión del proceso completo, desde la viña a la copa, y en la viabilidad técnico-económica de las soluciones, gracias a los análisis de costos-beneficios basados en evaluaciones de la demanda en Francia, España y Portugal, teniendo en cuenta los criterios de los consumidores en materia de calidad organoléptica, medioambiental y sanitaria. Dichos análisis se ampliarán hacia los mercados en fuerte crecimiento del Norte de la Unión Europea (estudio complementario del mercado sueco). La heterogeneidad de las características agronómicas regionales (Atlánticas y Mediterráneas) y de las aptitudes de los consumidores de los diferentes países, facilitará un enfoque comparativo y reproducible a escala europea. Se analizarán y discutirán los marcos reglamentarios de estos dispositivos: la legitimidad de las variedades resistentes, la implantación de medidas agroambientales y el etiquetado de los productos enológicos.

Assurer la compétitivité des entreprises sur le long terme est l'objectif principal. Pour cela il est nécessaire de prendre le tournant de la nouvelle demande de vins jugés plus nullpropres' sur le plan sanitaire et environnemental. VINOVERT associe plusieurs disciplines de recherche (Economie, Sociologie, Agronomie, ?nologie, Analyses chimiques) à des entreprises (viticulteurs, coopératives, négoce, fournisseurs œnologiques) et institutions (interprofessions, organismes d'appellations d'origine) intervenant directement sur les dispositifs opérationnels et leur diffusion. La démarche consiste à élaborer des solutions qui fassent la preuve de leur efficacité et de leur capacité réelle de mise en œuvre sur le plan social et organisationnel. Les solutions de long terme pour résoudre la crise environnementale de la filière (valorisation des cépages résistants aux maladies), de moyen terme pour agir sur la réduction des pesticides (conversion des exploitations et faisabilité agro-œnologique) et de court terme pour réduire les intrants au stade de la vinification (sulfites ou allergènes) seront analysées et soumises à l'arbitrage des consommateurs dans le cadre de marchés expérimentaux.
Le continuum de la vigne au verre et la viabilité technico-économique des solutions constituent l'aspect innovant du projet, grâce à des analyses coûts-bénéfices qui s'appuient sur des évaluations de la demande en France, Espagne et Portugal, en tenant compte des arbitrages de qualité organoleptique, environnementale et sanitaire. Ces analyses seront élargies aux marchés en forte croissance du nord de l'Union Européenne (étude complémentaire du marché suédois). L'hétérogénéité des caractéristiques agronomiques régionales (atlantiques et méditerranéennes) et des aptitudes des consommateurs des différents pays facilitera une approche comparative et réplicable à une échelle européenne. Les cadres réglementaires des dispositifs seront analysés et discutés : la légitimité des cépages résistants, la mise en œuvre des mesures agro-environnementales et l'étiquetage des produits œnologiques.
Read more Description (EN): VINOVERT is an innovative and structuring project for the vine / wine sector in the SUDOE region. Ensuring the long-term competitiveness of companies is the main objective. For this it is necessary to take the turn of the new demand for wines considered more clean on the sanitary and environmental aspect. VINOVERT combines several research disciplines (Economics, Sociology, Agronomy, Oenology, Chemical Analysis) with companies (winegrowers, cooperatives, trade, oenological suppliers) and institutions (interprofessional organizations, designation of origin organizations) directly involved in operational measures and their diffusion. The approach aims to develop solutions that demonstrate their effectiveness and their real capacity to implement socially and organizationally. Long-term solutions aiming to solve the environmental crisis of the sector (promotion of disease-resistant grape varieties), medium-term actions on the reduction of pesticides (conversion of farms and agro-oenological feasibility) and short-term solutions to reduce inputs at the stage of vinification (sulphites or allergens) will be analyzed and submitted to the arbitration of the consumers within the framework of experimental markets. The vine-to-glass continuum and the technico-economic viability of the solutions constitute the innovative aspect of the project, thanks to cost-benefit analyzes based on demand assessments in France, Spain and Portugal, taking into account arbitrations of organoleptic, environmental and sanitary quality. These analyzes will be extended to the fast growing markets of the North of the European Union (complementary study of the Swedish market). The heterogeneity of the regional (Atlantic and Mediterranean) agronomic characteristics and the consumer skills of the different countries will facilitate a comparative and replicable approach on a European scale. The regulatory frameworks of the devices will be analyzed and discussed: the legitimacy of resistant grape varieties, the implementation of agri-environmental measures and the labeling of oenological products.
Read more Achievements (EN): VINOVERT provides solutions to reorient the ways of wine production, based on the reduction of the use of pesticides and additives. For its development, the project has focused on the consequences of new behaviour in plots and on the development of innovations responding to the new demand of consumers. Experimental wines were made and product and sensory analyses were conducted to establish experimental markets in each of the participating countries. Likewise, socio-economic analyses were carried out to measure the importance of non-monetary incentives and modify the routine of farmers.
Among its results, VINOVERT has allowed:
- Making a state of the art of innovations of the resistant strains of the Sudoe area.
- Following up on organic and conventional plots to propose winemaking methods adapted to wines submitted to consumers.
- Proposing innovations for the reduction of sulphites.
- Demonstrating the possibilities of incitement by companies to facilitate the ecological transition of the vineyards.
- Demonstrating new consumer demands.
- Demonstrating the localized agronomic impacts of new modes of production linked to environmental impositions.
- Demonstrating the effect of competition between organic and healthy wines (without added sulphites).
Thus, VINOVERT has responded to the problem of the agro-ecological transition of viticulture, working on specific and localized cases. It has shown that the use of pesticides in viticulture is linked primarily to a real difficulty in modifying the behaviour of winegrowers and not economic reasons. Likewise, the project has contributed to new legislative proposals of the European Commission, on one hand to allow the use of hybrid varieties for the production of wines and on the other hand, to nullify the prohibition of cultivating six varieties for the production of wine and to increase genetic diversity. All these results have been reflected in a White Paper of which 3,000 copies were distributed.
